Problem is that once you've genetically modified anything, the results don't immediately appear. You might have a full couple of generations before bad effects occurred. In other words, 100 years. By then, it's a bit too late.
We've been genetically modifying stuff for thousands of years. Just look at dogs. Plenty of them have health problems but it's not like they're a roving menace chewing people's faces off.
Not the same thing, and you certainly know that. We have been rebreeding, crossbreeding, and hybridizing for the length of time you say. Genetic modification is quite different, and I'm sure you know it.
