you can never hire someone to provide a service for you cheaper than you can do it yourself

Capital and opportunity costs make this untrue. It doesn't really have anything to do with government crowding out private enterprise, which is done with stolen money and labor.

Yeah, that was the one and only line in the story that struck me as untrue.

That is only true of productive people, though.

Sure it is, why would I spend an hour shoveling snow when I could bill out that hour at a higher rate than the neighbors kid.

No. An ubermensch can do everything better, can be self-sufficient in a state of nature. But it's still cheaper in terms of opportunity costs and capital costs to buy something that's already been made by morons to save the time and effort.

I can repair the brakes on my car, and do it cheaper than a pro at a shop. But I don't, because I don't want to take the chance of killing my family saving a few dollars (if the 'fixed' brakes don't work) and if I survive the wreck there is someone to sue.

Same is true for the gas furnace in my basement.

You don’t have to be incompetent.

This reminds me of something I heard from Ben Shapiro a few years back (I know, don't even start). Said something along the lines of a single hoagie sandwich costing thousands of dollars over the coarse of a year or so if you completely create it by your own hand (raise the livestock, grow the wheat, etc.).
