Customers are simply voicing their wishes to the business. This isn't demanding that the government force them to offer a meatless option, but a request that they do. If they choose not to, they risk losing market share. Having a meatless meal makes sense. If a group of 5 people are going out to eat, and 1 of them is veg, then you risk losing the business of the entire group, who will go to another restaurant that has an option for everybody,

For a business, a petition actually means something if it gets a significant number of signatures. There's a lot of armchair activists out there so nowhere near 1 sig = 1 new customer. But if nobody says anything, nobody gets anything. If you want something you have to speak up.

You can feel free to demand steaks at vegan prices. If you can get enough purchasing power maybe some company will take you up on it. Or maybe it won't be profitable. I guess it depends of how much steak you want and what quality you're willing to go for.

You might have a better analogy by asking <insert vegan restaurant > have a meat option on the menu because you have vegan friends and can't eat there.
