If for some reason you're having trouble getting your RDV of iron, try having two packets of instant grits as part of your breakfast. You can buy the Quaker Instant Grits which contain no animal products (the box will say "Original" on the front), and each packet has 100 calories and contains 45% of your daily value of iron. That means 2 packets contain 90% of your RDV for iron! Not bad, eh? Grits are also very cheap and they taste great!
They're very fast and easy to make. Just heat up some water in a bowl in the microwave and stir in the grits. It may take you a while to figure out how much water you personally like to use. You can also try using almond or rice milk, but I've found that hot water tastes perfectly fine. You can also add sugar or honey or something but I think the grits taste great with nothing added. In a pinch, you can also stir in a packet of emergen-c.
If you don't like grits, try packets of instant cream of wheat. It's basically the exact same preparation method, but I believe each packet contains 50% of the RDV for iron compared to 45% from a packet of instant grits.
