SARS-CoV-2 has a mechanism that proof reads the RNA copy. This should slow down the creation of variations. I don't know if other coronaviruses have that mechanism too.

Some say that SARS-CoV-2 was crispered together in a lab. While natural viruses are "optimized" to function after the RNA is changed by a mutation, RNA put together in a lab lags this feature.
