I use a Hauppauge TV tuner card to do this. They're pretty great for capture. It took me a minute to get the correct driver installed, but after that it works like clockwork. If I want to view it I: totem /dev/video0 to record I use: cat /dev/video0 > test.mpeg

If you have an old analog to digital converter box from the switch over to digital TV you can use that to get RCA digital video which can be converted to USB with a $10 cord. You would still need some kind of device driver??

Or for $200 you can buy a whole new security system with 4 cameras.

They have wifi cameras like this for $25usd on Ebay and Aliexpress. They would be much easier to use. And you can view the output live on your smart phone or tablet.
