I just triple-checked, there's nothing in the BIOS setup (or whatever it's called these days) to control that.

I'm not crazy, the behavior of the power button really is that unpredictable and frustrating...

Not the BIOS, but the power settings in the Win10 control panel. Go to your search box, type "power settings" then from the pane on the right choose "additional power settings" from the "related settings" subheading. This will open the advanced power menu. From there, select the option to choose what the power button does. This will allow you to disable sleep. Hopefully.

I use a stripped-down Ubuntu-based self-customized Linux installation.
