Why bother simulating a phenomenon that doesn't get observed?
Observed by whom? Simulation requires simulators which requires intelligence behind the tech. Those behind the curtain can surely observe this stuff. Plus the science behind any type of observation is fascinating. From the atom to the universe mere observation can affect the observed. Anyway some good points you raise. I'm certainly not a proponent of simulation but the concept interests me, and if it turned out to be true, it would not bother me in a bit. It could make sense of the senseless.
