My main email that's for actual grown up real life shit is hosted on a domain I own through a reasonably trustworthy provider. For things related to shitposting I have various emails through providers like AOL and Yandex.

Email encryption is a waste of time for 99% people because you're not going to convince your contacts to adopt it.

You'd actually be surprised by how clear their privacy policy is. Emails are deleted (from server) within 90 days after you delete them from your account. I remember when they pressured Google to change their GMail policies by putting out a campaign pointing out that Google never deletes your emails from their server. Forced Google's hand to set a policy in writing.
