Jurisdiction has to do with unlawful surveillance. If you don't want to be spied on, you have a better chance avoiding it when using a service based somewhere that doesn't have such deals with the country you live in.

Note that if a state level actor is targeting you specifically, its very unlikely this will make a difference in the long run.
