Recording a person is perfectly legal even without their consent. You just can't use it in court. If it's a criminal investigation the police/FBI need to be in on it to obtain the necessary warrants if it's to go to court, which is still heavily cucked, and might not yield the same results as say public backlash that project Veritas can invoke. It's bigger than the professor, the entire college needs to answer for his actions in the same manner a police department has to answer for its officers.
