She told me you put the desired vegetable in the brine in the crock pot (made sure to let me know specifically not a new crock, it has to be an old one), cover it with a cloth, and let it sit for three months in the cellar. Then she told me very matter-of-factly that "that's what the Polllocks do," I think unaware that I'm mostly Polish. I had my doubts so I looked it up. (I mean...great grandma made sure to tell me in great detail many a Polish thing.) I'm pretty sure this is not actually specifically something "that Pollocks do," but probably just the old fashioned way to make pickles, from a time before refrigerators, and crock pots-- it doesn't have to be in a crock at all, it's just a convenient pot with a lid for them. I just thought that was weird, so I'd share a recipe and the mere fact that you can just throw some pickles in the basement and they come out pretty good three weeks later.
