Well I dunno. Transubstantiation has been argued about in the catholic church itself forever. Whether it's metaphorical or literal. Metaphorically, it would have pretty good reason to stand. The atoms of the bread are the same as the atoms of the body, so literally it holds up as well. It also empowers and reinforces the subject, Jesus as a translator of the spiritual material connection, which kind of is the point of the religion.

A few hundred years before that, Democritus said there was only atoms and opinions in the entire world.
