What makes it a "tip" vs a "gift"?

was the payment given in return of a service?

How do you prove that it was? Someone helps me move, I don't offer to pay them and they don't ask for payment. I decide to give them $20. How do you prove that the two are related? Perhaps I just like the person. Maybe I noticed their shoes were worn out and I thought - this person could use my help. If there was no agreement made regarding compensation of any kind, I don't think you can prove it's a tip.
