I worked in fast food + restaurants for a few years, USA. It's not as clean as you think, that includes that fancy restaurant that is staffed by whites.
At the fanciest place I ever worked at, I watched a cook accidentally drop an $80 dry-aged ribeye during a busy dinner service. The manager didn't feel like dealing with the customer, so this crazy bitch instructed the cook to wash it off, re-season it, then throw it back on the grill. You don't want to see how incredibly the nasty the floor is where people are cooking.
People also touch the shit out of your food with their bare hands before it hits your table. Sometimes 3 or 4 different sets of hands touched your food. Handwashing isn't as common as you think, because restaurants operate on razorthin margins and the workers are perpetually too busy to do things like handwashing properly multiple times a shift.
