Culture shifts. People are tired of the good vs evil stories of Tolkien. Villains are characters too, and giving them sane motives makes for a more engaging story.

If you want better stories, find them or write them yourself. Until then Game of Thrones hits a lot of points that people crave. Compelling villains (except for the white walkers. They're more of a deus ex villanus to wrap up the story now that typical hollywood writers have surpassed the book), great characters, worldbuilding, etc.
