I received a similar notice from Stripe in the last week for a new business I launched selling custom knives (I forge them myself). I switched to Gumroad for credit card payments. I contacted them first and explained the situation and they had no issue taking me on as a customer. Just in case they change their minds I'm also accepting payments using https://www.coinpayments.net as well.

While you're at it maybe you should see if you're susceptible to ((hosting concerns)). If you have centralized hosting I reccomened integrating IPFS so that they can't censor you through your hosting partner.
