At least on the ocean, I believe there is some "law" about the ship's home port extending to the ship itself. I assume there is a similar "law" in the air.
You would be correct. faa regs state that an aircraft in flight is under the jurisdiction of the most recent departure point. It's why kids can be born mid air and be considered a resident of one nation before landing in another.
