How does google make money? they collect data on people and their searches then sell them to any customers including government agencies, advertising companies, media/news companies, and the occasional NGO. Anyone who believes that google isnt collecting government spy money is a fool.

What about startpage.com? They're based on Google, but claim to be privacy oriented. I don't know if your searches would still be manipulated though

Is there any good, safe alternatives to gmail that guarantee you privacy?

I'd recommend Posteo or mailbox.org. They each cost about ~$15 a year, but they're about the best you can get for privacy and functionality. A good, free, up and coming alternative is ProtonMail. Tutanota as well, but not something I'd recommend for a main email provider.

Also, does it even matter when 90% of the people I have to email use gmail?

They are, of course, going to have whatever email lands on their servers. That doesn't mean it isn't beneficial for you to use a better service, though.
