I always interpreted the choking and such as meaning you were allowed to be violent and still be good. I even thought that Luke could use "force lightning" is he chose to, though using it to torture someone would certainly be Dark. Being a Jedi meant you were deeply connected with the world around you, and the "force choke" was just a clever application of moving matter at a distance. You could "force heart stop" if you wanted.
It wasn't until the prequels that it was established that you gained certain abilities as you went down the path of the dark side. Also, all that pansy shit about how Light-side Jedi has to be weird assholes trained from infancy and forbidden from love was nonsense. Luke murdered like 50,000 people on the Death Star and he was still good, but if you're a Jedi who falls in love suddenly your brain gets corrupted and you turn evil? It's just all a bunch of meaningless bullshit.

Oh my. Please check out Kyle Katarn and his legacy of badassery. Also KOTOR. Predating the prequels (Dark Forces, not KOTOR), but definitely that "dark" and "light" are in reality just flavors and tap into different aspects of the Force. It really comes down to passion vs zen.
If we're just going "good = light" "bad = dark" like the Jedi do, though... then, yeah... everything about choice goes out the damn window. You're either pious and a Jedi, or you're ... well, not, and you're a Sith. But by the time Luke got his shit in gear, the Jedi were extinct, and he saw to it that (as far as we knew) the Sith (side of the Force) were/was extinct as well, which means that rule goes out the damn window.
