I'm stuck on a 125 until I'm confident enough to do my full license, I wouldn't take it onto a 70mph limit road, but most people here do ~40mph on country roads anyway (something that used to drive me nuts in my car). It's a lot more enjoyable if you're stuck at those speeds to be on something that won't do a lot more...I think it probably helps keep me more chilled out, too. :P (the scenery on the bike it way better than in a car, too)
...and to edit again... - If it was cheap enough to do so, I'd probably still keep a 125 for city stuff when I can get a big bike. It's fun to be able to give it everything and still not break the speed limit :p
