Actually OP's struggle isn't with keto so much as with switching from eating store bought meals to home made. Food prep takes time, period.

I actually find that food prep for a low carb takes significantly less time then if I was eating regular, but mostly because I'm never hungry so I can't be arsed to make anything exotic.

you are definitely right. i don't enjoy eating to beginn with, and then adding meal prep to something i already don't like doing. I eat less with Keto, but i have to watch my weight, i am already skinny. soon enough i need to force myself to eat more.

bake non leafy veggies, pre-cook meat 70% of the way, nuke the rest from the fridge, hard boiled eggs are great also

I like to grill out on the weekends. Sometimes I'll buy enough meat for the whole week and grill everything together. Pick one thing to have for dinner that evening and save the rest.

My wife told me we're restarting keto and I'm starting a job where I'm working long days 6 days a week. So basically this is going to be a struggle for me soon.

I do love taking big packs of chicken thighs/legs and broiling them. Like half a week of lunches for my wife and I, Along with some veggies and some fatty sauce.

Life be like that sometimes. I spend most of my weekends doing "work" in my garden/yard or an odd side job I picked up. It feels like I work 7 days a week.

I have had great luck doing cauliflower bakes and stuff, anything where you can throw a bunch of shit in a casserole dish and bake it and put it away.

Cook a chunk of meat or organ meat. Beef kidney cooks up fast, chicken hearts cook up fast. Get leafy greens, tons of different Chinese ones, sauté them up. Whole meal is probably 10 minutes.

I make a great tasting pizza with Low Carb Tortilla shells as the crust. Takes me about 5 minutes to prepare and 8 minutes to cook (less than 20 minutes). The Low Carb Tortilla Shells are typically 5g and then I use a conservative amount of the lowest carb pizza sauce I can find (store brand is usually the best). Cheese and Toppings are easy.

I've been doing Keto for about a year and a half and I'm also a lazy cook. If it's not cheap and easy I don't typically do it. Most of my current meals are the same as my pre-Keto meals just without the carbs or with carb-substitutes.

You're all absolutely right. One thing I realized from this sort of thing is why we invented all of these bread and grain foods, etc, in the first place. People were bored and wanted to eat something more interesting.
