I saw this tip on a Youtube video and it's amazing. At the start of your cooking, just toss some eggplant cubes in there to replace some of the pasta. They have a similar bite and flavor than pasta, which is even more similar if you use some form of tomato sauce. Healthier dish and a dose of veggies with barely noticeable changes!
