I've seen really nice water simulations before running in a GPU, or even on HTML5 browser based one, but they don't tend to have that level of complexity and they have some interesting bugs, like generating enormous waves when you slowly sink and stone through the surface.

It couldn't. Even hardcore industry render farms take quite alot of time to handle scenes like that.

Nvidia did something pretty close without going to render farms.
