Call of Juarez: Gunslinger
It is a fairly recent western adventure FPS that is narrated by an old man in a saloon. As his audience ask questions or add their own corrections to the story, the scenario of the scene you're playing changes instantly. It has all the elements I expected from a western shooter; train heists, pistol duels, Indian attacks... give it a try.

GUN from 2005. It's like GTA in the old west.
Blood from 1997. A western horror themed Build-Engine (of Duke Nukem 3D fame) shooter.

Borderlands Borderlands 2 Borderlands: The Presequel
They all get the gunslinger vibe with a little sci-fi. Most western is the original. 11/10 would recommend.

Ones I like on this list include:
12 Is Better Than 6, a top-down hand-drawn western themed shooter. Also currently on sale for 66% off.
Hard West, an isometric RPG with turn-based combat in a western setting with some supernatural elements.
And Gunman Clive 2, a side-scrolling action platformer, similar to Mega Man.
