Smoked meat such as ham hocks or turkey legs/wings are very popular in the South for flavouring a pot of beans or greens (mustard, turnip and/or collard).

I love using ham hocks, two cloves of garlic, a cup each of diced onion and celery and two chopped dried chilies japonica in the water. Boil for two hours or so to make a nice stock, remove the meat off the hocks and return to the pot and then add one bunch each of coarsely chopped mustard and turnip greens. Simmer for 20 min.
