I love hot sauce. I love hot sauce. One thing I've learned is that it doesn't pay to be cocky before the heat fully comes on.

Have you made your own? If not, give it a shot. It's pretty easy (as in ~30 minutes of actual work), and you can get the flavors you want.

When I started doing it, I was pushing the envelope where my roommate and I would keep going hotter and hotter. Since then, I've toned it down to ~1.5x store-bought level, focus mostly on bringing out certain flavors that would otherwise be masked by the heat. Current batch has ginger and yeast extract, turned out pretty incredible. I'd also recommend giving smoked peppers a shot.

I often make batches of chipotle hot sauce. It is delicious.

My last batch was half chipotle and half roasted hot Hatch chilies.

So easy and so delicious.

I have not, but now I must. I do appreciate good pepper flavors. Thanks for the suggestion!
