Animals have all the vitamins and minerals you'll ever need, provided you also eat the organs. Beef liver is one of the most nutrient dense foods in the world.

Also, there was a doctor decades ago that starved a bunch of mental patients then gave them insulin to see what would happen. He found that even with doses high enough to put a normal man into a coma had little to no effect on them. In absence of carbohydrate intake the body adjusts and starts relying on ketones and fat.
Completely different thing.
The biggest problem with a meat only diet is lack of fibre. Fibre is needed for good gut health. In absence of fibre fermented foods will also suffice, hence why Inuits used to put some of their meat in seal bladders and buried them for weeks. When the western man came and told them they shouldn't do that they started getting sick.
No idea what Peterstien is actually eating but a meat only diet is feasible and allows a person not only to survive but actually thrive.

Well electrolytes have little to do with fat. You get electrolytes by eating foods that contain minerals. Beef liver has all the electrolytes you'd ever need.
I'd say the bigger problem with having no fat is that your heart actually relies on fat to run (because relying on glycogen would make fasting impossible). Apparently that (combined with weed) is what supposedly killed Bruce Lee.
But I doubt Peterstein is so skinny. There's a set point at which your body will stop burning fat reserves and maintain homeostasis, determined by your hormones and genetics. You have to work really hard after that to burn extra fat. You use most of your energy on body heat (about 50%) and on your brain (about 20%), so once you reach your genetic body fat limit you'll simply produce less heat and sleep more.
