I waited two weeks, if I remember right. It will get less sweet and more sour the longer you leave it out, but the fermentation slows right down once in the fridge.

Make sure it's bubbling and that it doesn't smell foul. Taste it once in a while but stir it first, I found the top layer fermented more quickly than underneath so my first tastings weren't representative of the actual flavour.
