The IPA beer vinegar I did a while ago turned out very well! It's not much like malt vinegar which was to be expected since IPAs are not heavily malted beers.
The aroma is sharply malty with a warm skunky undertone. Tastewise it's quite potent, the initial vinegar punch is very strong and forward with a pervasive mild malt taste. The bitterness of the hops has mellowed and the hops themselves lend a little of their pininess to the aftertaste. Overall the vinegar tastes bright with a rich savoury quality while remaining dry.
Next I should ferment a Pale Ale into vinegar to see how much character the hops contributed.
