Like, leeches? I would try 'em if I got the chance. Not what I was thinking of though. What I have is mackerel and herring, and I might try some sardines too if I like the way those turn out. Little fishes in general really.

Like worms. Biggest thing you need to worry about with fermenting (or other forms of preserving) fish is parasites.
