You could also skip the bread, and add a half cup of 4% cottage cheese. ~40 grams of protein in ~300 calories. Makes for a great light meal, or big snack!

I'm glad you liked it!

You can also substitute yogurt for the cottage cheese. Sometimes I'll add a half cup of greek yogurt and crumble a tablespoon of feta or Roquefort in it. Yummy!

Oh yeah. I sub greek yogurt for cottage cheese sometimes. Throw half a cup in there. You won't get quite as much protein (maybe 5-10 grams less, not a big deal at all), but it's still just as yummy!
