I made a low-carb coconut meringue the other day with almonds instead of flour and Splenda instead of sugar. It was real good. Will probably use coconut oil instead of butter next time, though.

It's literally Simply Sarah's Impossible Coconut Pie with chopped almonds instead of flour, splenda instead of sugar, and egg whites instead of eggs. I use my Blendtec which aerates it really really beautifully. It was a challenge I put myself up to for fun in response to Beefneck McGillicutty.
