Any time I've eaten them they taste like garden mulch. I guess I haven't been motivated to improve that experience.

If you change your mind, here's the recipe I use! https://www.cookforyourlife.org/recipes/egyptian-yellow-lentil-soup/ I decrease the oil and double the spices, and instead of blending I whisk it so it keeps a little more texture. (I do blend the onions with some broth, though.) It tastes unbelievable with a big squeeze of lemon on top.

Lentil by itself isn't worth getting excited about. When you mix in some other stuff - green beans, or collard greens or peas/carrots - and season it well with sauteed onion, garlic salt, and some spices... that's when you see what it's all about. Look at north-african or indian recipes - they make a lot of lentil stuff.

Substitute mince with lentils in a spagh bol :)
