Because fats don't eat vegetables ever (unless they're deep fried and/or covered in ranch), so they assume anyone eating them must be vegetarian.

I have an almost-underweight bmi (18.6) and fatties seem to be always astonished at how 'rich' my diet is. I eat mostly meat/fish, eggs, dairy, non-starchy veggies and occasionally soy, because that's the diet I personally feel my best on and have the most energy on. My vegan friend who is bmi 24 nicknames me the arch-carnivore. The main difference is I eat far smaller portions of said 'rich' food and move around a lot more and avoid processed snack foods except as an occasional 'treat'. But fatties always assume I must live on lettuce leaves.
