Tilted Kilt has obviously thought this through and vetted it with their legal dept. They clearly spelled out that they don't hire mere wait staff. They hire entertainers who also serve. Because of this, they are protected under the same laws that allow tv and movies to cast for certain types of characters without being considered discriminatory. Check out their very own hiring page. They call it a 'casting call' and make it beyond clear that a person who applies is not being hired to simply be waitstaff.
The legal term for this is bona-fide occupational qualification. As you can see from their hiring page, Tilted Kilt has set forth their qualifications and made it clear as part of their hiring practices. Typical fatty. Refuses to read the rules and reees when she loses the game.
