Very simple.

Season to your liking. I used lemon garlic chicken season mix, added rosemary, and fresh lemon juice. I put the squeezed lemon in the cavity. Put a cup of chicken stock in the bottom. Add yellow potatoes (these are the best for stewing) and carrots.

Let it cook for a couple of hours, with the lid on, until done and tender. Reserve the stock for gravy.

It's the most moist chicken you'll ever have.

Cool. Do you drain it and flip it to crisp the skin? Or do you just let it cook through in there?

Let it cook through. The skin won't crisp like this but you'll get an incredibly moist and flavorful bird.

Definitely reserve the liquid for a gravy.

I've got absolutely no idea what a "dutch oven" is, but I came here expecting to see anything but an actual chicken in an actual fucking "oven".
