recipe:

5lbs pork
1 oz salt
1/4 oz black pepper
1.5 oz fresh  garlic
1 oz parsley (used less of dried)
1 pinch red pepper flakes
1 pinch of lime zest
29-32mm diameter hog casings

3/16 die in grinder

I doubled the recipe and added extra fat to make up for a lean cut.
