You just need to ask yourself whether you prefer the certainty of fiat, or the promise of Bitcoin. Adjust accordingly.

If you are asking about fork, then dont worry - if bitcoin get forked, you will be able to spend your funds in both chains parallely. If fork WONT happen and blocks get saturated, it is possible the community will start migrating to another cryptocurrency leaving bitcoin for slow death.

As for BTC price I cant predict anything. Literally nobody can

This volatility is nothing. Bitcoin goes up and down anymore. I'd give your bitcoin portfolio at least a year before assessing it's value as an investment. Nearly every asset loses value in small periods of time. The long-term trend of deflationary assets are to go up in value. Albeit bitcoin is still pretty new, so it'll probably be either worthless or much more valuable than what it currently is.

If volatility is an issue, bitcoin isn't for you. Markets are mostly moved by fear and greed. This is either a great time to buy up cheap coin from weak hands, or jump ship (to lock in gains or minimize losses).

I have one third of money on fiat buying materials to make a house and the rest is on Bitcoin, I don't know if I should sell now or wait for the price to bounce back. The architect is going to start building in September

I am hodling half of my bitcoin, and have my other half on an exchange. With the half on an exchange, I am selling where I see resistance and buying back more bits where there is support.
