or...I was hoping others running P2Pool nodes in other locations would pop in and drop their info - I know you can't bend the laws of physics yet :)

It's an engineering problem, not a physics problem. The diameter of the earth is 12742 km, which means that light can travel between any two points on the surface in 43 ms or less. Everything else is just a matter of implementation.
You can always set up your own p2pool node and stick XT on it. It's really not hard. Just follow these instructions, and replace Bitcoin Core with XT - http://p2pool.in/#getting-started
