Sometimes they do. Glaciers are formed over time from the snow falling on them, and the lakes are formed from the water melting off. If less water goes into the system than comes out, eventually there's no more glacier or its lakes.

what about the great lake in the usa thouhg? did they happne to tap a few springs on the bottom that keep them going? does winter play a large part?

While the great lakes were formed by glaciers they're currently refilled more by rain/snowmelt than glacial meltwater. Rivers flow in, lakes get fuller, rivers flow out lake gets lower. And ofc, rain and evaporation on the lakes themselves make a difference too.

As for why they haven't evaporated, they're fucking huge man. Really fucking huge. Even if they were losing more water than they take in (they might be, I don't know) it'd take a long long time for them to disappear or notably shrink.
