Well, my grandmother believes black people are the children of Cain. She believes that since Adam and Eve then Cain and Abel were the only humans on earth when Cain was cast out after killing Abel he mated with an ape and that's where the Mark of Cain comes from, making the offspring black. Granted she's 75, quit school in 8th grade, grew up rough in the Appalachian mountians and her most noted trait was fighting you can take that as you like. I was never religious, so I always just thought it was another quirk of old people until I got around high school and realized it's hella racist.

Well she also chased me out of the garden with a rake once because she said stepping over her cucumber vines while I was on my period would kill them. I don't think many of her beliefs are backed by science or logic.

I don't have a full answer for that, but, if, I repeat, if, the Bible is true, Adam & Eve weren't white.

The bible was written by men to control tribes. At the time, there wasn't any issue with other races because the Bedouins & tribes at the time were all the same people. the main focus of the bible is to control behavior, and ensure the people breed within their own tribes. This was essential for survival.
Each culture has some story of how people came to be. The Japanese Kojiki has some fun stories, the Native American Indians have some really cool stories too, each tribe had a different one. the Apache, the Cherokee, The Hopi, the Navajo, etc..Why anyone would believe the biblical story of creation, over any of the others is a complete mystery to me. Furthermore, why anyone can somehow shoehorn logic into any of the stories and believe them is astounding, especially at a point in time when we have massive archeological evidence that completely shreds them.

Don't take the text literally. It's largely proverbial and equally largely taken far too literally.

But Adam & Eve story is mute. How do you explain Blacks, and Asians after NOAH? The whole world was flooded and only Noah's family survived so how could the diversity and migration happen?

First, the bible doesn't explain this. The bible is a book written to answer the question "how can man have a relationship with God." It is sufficient for answering that question but there is lots of information int the world that isn't needed to answer that question so the bible doesn't cover everything. This is why it makes a poor textbook for most classes.
Most Christians believe that the Tower of Babel caused races to appear. We believe that when the languages were confused people spread out across ththe earth. When people went to different places darker and lighter skin tones were better suited to the environment and in this way race evolved.
Super simple solution and if I am not mistaken apart from Babel, this is what modern science teaches. The good thing is that if science comes up with some other explanation that makes more sense Christianity can role with it. It's not dictated in the text so whatever science says will be fine..
