Osage orange is valuable? We normally just leave it in a ditch to rot since it burns very dirty.

Yup, one of the prettiest hardwoods we have. I grew up thinking it was shit wood too, my dad hated it. Turns out it's the most valuable wood my sawmill has, and not just by a little, the next cheapest wood is half the price per board foot. And man, I LOVE the yellow hues it has.

Mineral oil IS food grade, it's a laxative. So yup! As long as you don't somehow suck all the oil in the board out in one gulp, you're fine, the minute quantity that might get on your food from cutting will be negligible. But, don't leave such a cutting board laying on your fancy doily or clothes, the oil will seep out.
