Mythbusters actually tried this out with dipping their finger in water and then dipping it in molten metal.
They first did a test with a sausage were satisfied enough with the results that they felt comfortable trying it themselves.
They were able to figure out that the water on your finger evaporates almost instantly, but creates a gaseous pocket which protects your finger. You can't leave your finger in there for very long, mind you, but you can do it.

Her fingers are covered in the batter and that has to cook before it starts to cook her fingers that's why she keeps dipping her fingers in the flour.
