Kvass is traditionally made with bread, no? So this is isn't really kvass, just fermented beets. Good job nevertheless. If I recall, kvass was a way to utilize rye bread before it would spoil, as it doesn't make good breadcrumbs like wheat bread does.

Yeah, I don't know how long ago people started calling this "beet kvass". I'm sure it was fairly recent in the scheme of things. My guess is it started because this was intended as a beverage with similar health benefits to the original kvass. Calling it pickled beets or fermented beets doesn't sound as much like you're supposed to drink it. The word kvass also seems to mean fermented or sour, so it is accurate, at least.

You can make it with rye bread, for sure. But this is another kvass. It derives from the Slavic word for sour.

For instance:

Polish: kwas buraczany;

Russian: свекольный квас (svekolny kvas);

Ukrainian: буряковий квас (buryakovy kvas)
