I love fermented beets! Your's look lovely. I have some siting on my counter right now. I have to use a 5% solution as well as some mustard seed to prevent mold in my climate though.

Does the mustard seed add noticeable flavors?

I find it can mute very overpowering flavors making them more enjoyable. It doesn't create a big bang of mustard flavor whole and unroasted though.
