I love fermented beets! Your's look lovely. I have some siting on my counter right now. I have to use a 5% solution as well as some mustard seed to prevent mold in my climate though.

For hydration, for supporting liver and kidney function, and for healthy gut flora, yes.

For flavor... Would you like salty, effervescent dirt better than mountain dew? Likely not.

I definitely recommend moving it to the fridge once it really starts bubbling. My batch was this and two other containers, and the one I left out of the fridge molded on top.
