When making round eggs butter the pan the ring and crack egg - yes poke the yolk and let it flatten and use a small amount of water one two onces on the outside of the ring and cover. Think shots shots shots. Medium heat. You don't wanna boil off the water before the egg is done. When the water is gone you can't cook more because you will brown the egg. If egg is not done add another shot of water to keep your pan temp low and steam heat working from the top and sides.
Sausage: use the 1 pound mild plastic tube type and make a party. Fry that fucker up on medium.
