Because only taxpayers have all the information.

I just realized if they put all our money on blockchain, they'll have an entire ledger of all income information. Then they could use AI to track and compile a report for every last penny you receive to be taxed.

Which the COPY from OTHER sources. Get it?

Other sources which often are not the government (much less the IRS) and which the government often knows nothing about. The government simply is not that competent nor, frankly, should anyone want it to be. Just to give one small example on each of the income and deduction sides:
On the income side, some clients, especially those whose payments are small amounts fail to properly report their payments on a 1099, so the government would have no knowledge of it without being aware of all bank deposits and what they were for. But it is still taxable income which I have occasionally needed to report and on which I needed to pay taxes.
On the deduction side, the government has no way of knowing the mileage which can be included in a medical expenses deduction. That does not apply to a large number of taxpayers, but it does apply to some. There have been years it saved me money.

Imagine thinking they are not tracking every purchase, especially now with electronic cords and purchases.
This is just a scheme to fine people making a mistake on a form that is constructed in such a way that almost guarantees a mistake will be made

Wrong

No, it's not. While they could calculate a very large number of returns, those returns would not represent anywhere near the majority of taxes due. The vast majority of taxes are paid by the minority of taxpayers whose returns are more complicated and include a lot of information the government either doesn't have at all, or doesn't have in a format or held by the agency necessary to complete a return.
