Got some cornmeal wasting away in the pantry? Got 45 minutes? You got yourself some Johnny Cake.
1 cup of cornmeal
2 cups of flour
1 1/2 teaspoons of baking powder
1/2 cup of maple syrup
1/2 cup of brown sugar
1/2 cup of butter
1 teaspoon of salt
Start it all off by blending the brown sugar, maple syrup, butter, and eggs together. Make them reasonably consistent - this means no chunks of brown sugar floating around, you may want to sift your sugar a bit before hand to make sure the stuff is loose enough to not make trouble.
Next mix together your dries - salt, flour, cornmeal, baking powder. Pour the liquids into the solids and mix, they should be about the consistency of a cake batter.
Pour into a buttered pans, get it to the oven at 400°F and let bake for between 15-25 minutes. The deeper the pan the longer you gotta cook, so long and short is best. Using two or three loaf pans works well.
If you want a crust on the top then before baking sprinkle a mix of one part cornmeal to one part flour to one part brown sugar to one part butter that you have mixed vigorously with a fork until it becomes basically a crumble.
